Ethiopian Harrar undergoes traditional natural (dry) processing - coffee cherries dry intact on raised beds for weeks, allowing fruit sugars to penetrate the bean. This centuries-old method, used since coffee's discovery in these highlands, creates the bold fruit-forward character.
